How to use Louis Francois Chantifix

  • Use at 5 to 20g per kg of cream (0.5% to 2%).
  • Use around 20g/kg for high-fat cream with low texture.
  • Use around 5g/kg for cream that is already well textured.
  • Place the cream in a mixer.
  • Start whipping on first speed and sprinkle Chantifix in gradually.
  • Continue whipping until the desired texture is reached.
