How to use Louis Francois Tartaric Acid
- Dosage: quantum satis.
- Prepare a 50% solution using equal parts tartaric acid and water.
- Add gradually until the desired pH or acidity is reached.
- For better dispersion, add the solution at the end of cooking in pectin-based jams or confectionery.
- Use in fruit pastes, coulis, confits, jellies, fillings, preserves, and as an acidifier in dough or baking powder systems.
